Was skeptical about instant miso, but the tofu chunks actually hold their shape and the broth tastes properly fermented, not salty powder. Boiling water and two minutes later I've got a legit lunch that doesn't taste like a concession stand. The sea salt level is spot on for me.
I keep a pack in my desk drawer for days when lunch is a distant hope, and the fact that the tofu actually holds its shape and the sea salt keeps it from tasting overly sharp is a nice surprise. Takes just a couple minutes with hot water and tastes like a real broth, not a powdered afterthought.
The soybeans and rice are aged properly so you get that deep, fermented umami without any harsh saltiness. One cup with hot water tastes like it came from a real ramen shop.
