Förberedelsetips: När du gör Pad See Ew eller annan wok med nudlar, ta bort nudlarna från blötläggningen i varmt vatten efter cirka 6 minuter, istället för de rekommenderade 8 minuterna. När de tillsätts i woken kommer de något underkokta nudlarna att absorbera mer fukt och tillagas ytterligare när de wokas. Om du tillsätter färdiga nudlar i en soppa, tillsätt dem precis innan servering. Annars blir nudlarna för mjuka och stärkelsen som frigörs under tillagningen förändrar smaken och färgen på soppan.
